  • 3 whole Boneless, Skinless Chicken Breasts
  • 2 cans (29 Oz. Size) Whole Stewed Tomatoes, In Juice
  • 1 whole Onion, Chopped
  • 3 cloves Garlic, Chopped
  • 1 whole Small Eggplant, Peeled And Cubed
  • 1 pint Mushrooms, Sliced
  • 18 cups Capers
  • 1 teaspoon Salt
  • 1/2 teaspoons Black Pepper
  • 1 Tablespoon Italian Seasoning
  • 1/4 cups Red Wine Or Chicken Stock
  • 2 whole Chicken Bouillon Cubes

Directions

    Place chicken breasts in a slow cooker add all other ingredients.

    When adding the tomatoes, you can break them up with your hands.

    Cook on low for 8 hours.

    Serve over polenta, rice or your favorite pasta.
