Chicken and Turkey Sausage Calzone

- 1 Tablespoon Active Dry Yeast
- 1- 1/2 cup Warm Water
- 3- 1/2 cups Flour
- 1 dash Salt
- 2 Tablespoons Olive Oil, Divided
- 2 cups Chopped White Onion
- 3 cloves Garlic, Minced
- 1 Tablespoon Worcestershire Sauce
- 1 whole Boneless/Skinless Chicken Breast Cubed
- 1 whole Turkey Sausage Link, Sliced
- 29 ounces, weight Canned Crushed Tomatoes
- 6 ounces, weight Tomato Paste
- 8 ounces, weight Shredded Cheese
- 4 dashes Basil
Directions

1For the dough:

2In a small bowl, add the active dry yeast and warm water.

3Set aside.

4In a large bowl, add flour and the dash of salt.

5Mix well.

6Create a well in the flour mixture.

7Pour in the yeast/water and 1 tablespoon olive oil inside the well.

8Fold the flour into the yeast mixture with a spatula.

9When dough starts to form, use your hands to mix/knead.

10Add extra flour if needed.

11Continue kneading dough on a flat, floured surface.

12In a large bowl, rub some olive oil along the sides and bottom.

13Place dough inside the bowl and cover.

14Let rise for 1 to 1.5 hours.

15For the calzones:

16Preheat oven to 350 degrees.

17Chop up the onion.

18Mince the garlic.

19Add to a medium-sized pot on medium-high heat with the remaining tablespoon of olive oil and Worcestershire sauce.

20Dice up skinless/boneless chicken breast and turkey sausage link.

21Add to a skillet and cook on medium heat.

22Add crushed tomatoes, tomato paste and basil to the onion and garlic.

23Mix well.

24Reduce heat to low.

25Take the dough out of the bowl and roll out on a floured surface.

26Cut down the middle.

27Add shredded cheese, sauce and meats to each side.

28Fold the dough over and press on all sides/edges with a fork.

29Add some more shredded cheese along the folded/pressed edges.

30Add a little olive oil to the top of the folded calzone and make 3 slits along the middle.

31Bake for 35-40 minutes.

32Cut both calzones in half to make 4 servings.
