  • eggs
  • bread crumbs
  • 10 oz. mushrooms
  • 16 oz. diced tomatoes
  • 1 1/2 c. white wine
  • 1 onion
  • 1 (8 oz.) tomato sauce
  • 3 lb. chicken cutlets

Directions

    Dip chicken in egg, then bread crumbs.

    Brown in oil.

    Drain oil and saute onions and mushrooms until tender.

    Add diced tomatoes, tomato sauce and white wine.

    Add chicken to this mixture.

    Cover and simmer 1/2 hour, until chicken is tender. Serve over rice.
