Chicken Apple Saute

Ingredients
- 1 red Delicious apple, cored and sliced
- 2 Tbsp. oil
- 1 medium green pepper, cubed small
- 1 c. celery, sliced diagonally
- 1/2 c. apple juice or cider
- 1 Tbsp. white vinegar
- water, lemon or lime juice
- 1 lb. chicken, boned, skinned and sliced in strips
- 1 medium onion, sliced lengthwise
- 1 Tbsp. cornstarch
- 2 tsp. soy sauce
Directions

1Dip apple slices in mix of 1/2 water and lemon or lime juice. Heat oil in nonstick skillet.

2Saute chicken until no longer pink and remove from pan.

3Saute green pepper, onion and celery until tender-crisp.

4Return chicken to pan; cook for 1 minute.

5Combine remaining ingredients; add to mixture.

6Cook until sauce thickens. Makes 3 servings.
