Ingredients
- 1 lb. boneless chicken breasts, cut into 1-inch pieces
- 3 Tbsp. olive oil
- 2 cloves garlic, minced
- 1 c. chicken broth
- 3 Tbsp. lemon juice
- 1 Tbsp. cornstarch
- 1/2 tsp. rosemary
- 1/2 tsp. basil
- 1/2 tsp. oregano
- salt
- pepper
- 6 1/2 oz. jar artichoke hearts
Directions

1Drain and cut up artichoke hearts; saute.

2Saute chicken and garlic in olive oil over medium-high heat for about 5 minutes. Mix remaining ingredients in a separate bowl.

3Add to chicken when cooked.

4Let thicken.

5Add artichoke hearts and simmer 10 to 15 minutes.

6Serve over angel hair pasta or rice.
