  • 2 (16 oz.) cans asparagus, drained
  • 4 chicken breasts, cooked, deboned and diced (should make about 2 c.)
  • 3 Tbsp. butter, melted
  • 25 Ritz crackers, crumbled
  • 1 c. mayonnaise
  • 1 c. cream of mushroom soup
  • 1 Tbsp. lemon juice

Directions

    Place asparagus in casserole dish.

    Brown chicken and layer over asparagus.

    Mix soup, mayo and lemon juice; pour over chicken.

    Brown crackers in butter and sprinkle over soup mixture. Bake at 350° for 35 to 45 minutes until bubbly.
