- 1 lb. boneless, skinless chicken breast cut in cubes
- 1 Tbsp. olive oil
- 1 onion cut in chunks
- 1 - 14 1/2 oz. can stewed tomatoes
- 1 - 6 oz. jar marinated artichoke hearts
- 1/2 c. Feta cheese, crumbled
Directions

1In a skillet brown chicken in oil, add onion and cook 2 minutes.

2Stir in tomatoes and marinade from artichokes.

3Cook over medium heat 10 - 15 minutes or until thickened a bit, stirring frequently.

4Stir in artichoke hearts.

5Heat through. Top with Feta cheese.

6Serve over rice.
