- 4 slices Bacon
- 2 cups Sliced Mushrooms
- 3 cups Cooked, Shredded Chicken
- 3 cups Baby Spinach
- 6 whole Flour Tortillas
- 3 whole Sliced Avocados
- 2 whole Sliced Tomatoes
- Chopped Cilantro (optional)
Directions

1Slice bacon into 1/8 inch pieces, let render on medium heat in a large skillet.

2Remove bacon when crispy, let drain on paper towels.

3In bacon drippings, saute mushrooms until golden brown.

4Add chicken meat to warm, then add spinach.

5Turn off heat and just let the spinah wilt.

6Grab a tortilla.

7Place 1/4 cup of chicken mixture, along with a few avocado slices, tomato slices and bacon bits.

8Sprinkle cilantro to taste.

9Roll up and repeat with remaining tortillas.

10You can also add sour cream jalepeno to add a little heat.
