  • 2 c. cooked chicken (bite-size pieces)
  • 1 c. cooked frozen peas
  • 2 pimientos, diced
  • 1 (3 or 4 oz.) can mushroom (stems and pieces, including juices)
  • 2 Tbsp. butter
  • 1/4 c. flour
  • 3 c. milk
  • chicken broth or half and half
  • salt and pepper to season
  • baking powder biscuits
  • stuffed olives

Directions

    Melt butter; blend in flour.

    Add milk, chicken broth or half and half.

    Cook until thick.

    Add the chicken mixture (chicken, peas, pimientos and mushrooms); season to taste with salt and pepper.

    Pour into a large shallow baking dish.

    Cover top with 1 1/2 inch baking powder biscuits, press a slice of stuffed olive in center of each and bake at 450° for 12 to 18 minutes or until biscuits are done.
