  • 1 whole Young Hen
  • 2 Tablespoons Salt
  • 1 whole Small Onion
  • 1- 1/2 stick Butter Or Margarine, Divided
  • 8 cups Chicken Broth
  • 1 pound Hillshire Farms Smoked Sausage
  • 1 teaspoon Pepper
  • 4 cups Raw White Rice

    Cook hen in a large pot with water and the salt.

    The hen will take several hours to become tender.

    Once chicken is cooked, cool and de-bone the hen.
  4. 4
    Shred the chicken and set aside.

    In a large pot (cast iron works really well), saute onion in 1/2 stick of butter/margarine.

    Add the chicken broth (you can use the water the hen cooked in or use store-bought), sausage and chicken.

    Add pepper.

    Bring to a good boil.

    Add rice and bring back to a good boil.

    Stir and cover and turn to simmer.

    Cook for 30 minutes with a lid on.

    Do not stir or peek during the 30 minutes.

    Once 30 minutes is up lift lid and place the remaining one stick of butter/margarine on top and replace the lid.

    Once butter/margarine is melted, it is ready to eat.
