  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 (4-oz.) container crumbled blue cheese
  • 1/2 cup canned whole kernel corn, drained

    Combine the first 5 ingredients in a medium bowl.

    Whisk together egg, milk, and oil. Stir egg mixture into flour mixture just until smooth; fold in blue cheese and corn. (Batter will be thick.) Spread mixture in an even layer (about 1 inch thick) in a greased 8-inch square pan.

    Bake at 400° for 12 to 15 minutes or until golden brown. Cool in pan on a wire rack for 10 minutes. Remove cornbread from pan; place on rack to cool completely.
