- 2 frying chickens
- 1 bell pepper, chopped
- 2 (No. 2) cans tomatoes
- 3 onions, chopped
- 2 c. celery, chopped
- salt and plenty of pepper
- 2 c. whole grain rice
Directions

1Fry chickens, dipped in flour, until brown, in drippings, about 2/3 cup.

2Saute pepper, onions and celery; add tomatoes and heat to boiling.

3Add washed rice.

4Spread evenly over bottom of roaster.

5Place chicken on top.

6Pour boiling water over whole dish until covered.

7Place lid on roaster and bake 1 hour in 350° oven.
