  • 2 frying chickens
  • 1 bell pepper, chopped
  • 2 (No. 2) cans tomatoes
  • 3 onions, chopped
  • 2 c. celery, chopped
  • salt and plenty of pepper
  • 2 c. whole grain rice

Directions

    Fry chickens, dipped in flour, until brown, in drippings, about 2/3 cup.

    Saute pepper, onions and celery; add tomatoes and heat to boiling.

    Add washed rice.

    Spread evenly over bottom of roaster.

    Place chicken on top.

    Pour boiling water over whole dish until covered.

    Place lid on roaster and bake 1 hour in 350° oven.
