Chicken Breakfast Sausage

  • 1.5 pounds Ground Chicken
  • 1 head Onion
  • 2 cloves garlic
  • .5 tablespoon Thyme
  • 1/4 teaspoon Oregano
  • 1/4 teaspoon Cinnamon
  • 1 teaspoon Black Pepper
  • 3/4 teaspoon Salt
  • 2 teaspoon Ground Mustard
  • 1 teaspoon Fresh Rosemary
  • 2.5 tablespoons Butter

Directions

    Saute onion and garlic in butter on medium heat until golden

    While onions are cooking, combine remaining ingredients in a large bowl

    When onions are ready, add them to the bowl and mix thoroughly. Leave remaining butter in the pan to be used to cook the sausages in

    Divide sausage mixture and roll into 12 small balls, each roughly the size of an egg.

    Place several balls into the pan and cook on medium heat.

    Flip when golden brown on the bottom side, and flatten slightly with a spatula to form a nice sausage patty. Cover pan and cook thoroughly.
