Chicken Breast With Peanuts

Ingredients
- 4 boneless, skinless chicken breasts
- 1 shallot, minced
- 1 medium onion, chopped
- 1 green pepper, chopped 1/2 inch by 1 inch
- 1/2 c. dry red wine
- 1 tsp. chile garlic paste (available at Oriental food stores)
- 1/4 c. peanuts or almonds
- salt and pepper to taste
- olive oil
Directions

1Sprinkle chicken with pepper (and salt to taste).

2Brown lightly in olive oil.

3Remove from pan.

4Add shallot, onion and pepper.

5Saute as desired (from just clear to browned).

6Add wine, stir in chile garlic paste.

7Return chicken to pan, cover, cook over low heat 10 minutes.

8Add peanuts or almonds, cook 5 to 10 minutes more.

9Serve with rice or pasta.
