Chicken Breast With Peanuts

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 shallot, minced
  • 1 medium onion, chopped
  • 1 green pepper, chopped 1/2 inch by 1 inch
  • 1/2 c. dry red wine
  • 1 tsp. chile garlic paste (available at Oriental food stores)
  • 1/4 c. peanuts or almonds
  • salt and pepper to taste
  • olive oil

Directions

    Sprinkle chicken with pepper (and salt to taste).

    Brown lightly in olive oil.

    Remove from pan.

    Add shallot, onion and pepper.

    Saute as desired (from just clear to browned).

    Add wine, stir in chile garlic paste.

    Return chicken to pan, cover, cook over low heat 10 minutes.

    Add peanuts or almonds, cook 5 to 10 minutes more.

    Serve with rice or pasta.
