  • 1 cup low fat cottage cheese
  • 12 cup light sour cream
  • 14 cup skim milk
  • 1 egg
  • 1 cup reduced-fat sharp cheddar cheese, shredded
  • 2 tablespoons olive oil
  • 2 boneless skinless chicken breasts, cubed
  • 1 small yellow onion, diced
  • 1 tablespoon garlic, minced
  • 1 (14 1/2 ounce) can no-salt-added diced tomatoes, drained
  • 4 cups broccoli florets, steamed
  • 1 tablespoon red pepper flakes
  • 1 teaspoon cumin

    Preheat oven to 350.

    Blend cottage cheese and sour cream in a blender until smooth.

    Add milk, egg, and cheddar cheese to blender and mix ingredients well.
