Oven Beer Can Chicken

- 1/4 cups Montreal Steak Seasoning (glorified Salt And Pepper)
- 1 teaspoon Cajun Seasoning
- 3 Tablespoons Brown Sugar
- 1 whole Chicken
- 1 whole (12 Oz. Size) Beer
Directions

1Mix the seasonings and sugar together.

2This is the rub I used, but its quite flexible if you want to add cayenne pepper or anything else or a totally different rub altogether.

3Preheat the oven to 400 degrees F

4Clean up the chickenremove giblets, rinse etc.

5Rub the rub of your choice all over the outside and under the skin trying not to rip the skin.

6Open the beer can, drink a few large swallows.

7Add any remaining rub you have to the beer.

8Place the beer can in a metal pan with at least 2 inch sides.

9Spray the can on the side with nonstick cooking spray.

10You really dont want to skip this step or the chicken will stick!

11Sit the chicken up on the beer can so that the can goes inside the chicken and balances on the beer can and the chickens two legs.

12Bake the chicken at 400F for 30 minutes.

13Then reduce the oven temp to 350F until the chicken is cooked (for my 4 pound chicken it took around 1 hour).

14Cooked means at least 180F degrees internal temperature with a meat thermometer and delightfully crispy.

15Remove the chicken from the oven and let it rest for about 15 minutes.

16Now, you need to get the chicken off of the can.

17If youre lucky, you can grab the whole chicken with some giant tongs and it will slide off.

18If youre like me, you need to punch a hole in the bottom of the can and let the beer drain out into the baking pan.

19Move the chicken somewhere to carve it and then use the tongs to grab the can and yank it out.
