Chicken Cabbage Bake

  • 1 broiler-fryer, quartered
  • 1 small cabbage, cut into wedges
  • 1 medium onion, sliced and separated into rings
  • 2 Tbsp. water
  • 2 tsp. granular chicken bouillon, divided
  • 1 tsp. salt, divided
  • 1/2 tsp. nutmeg, divided
  • 1/4 tsp. pepper, divided

Directions

    Arrange cabbage wedges in deep 3-quart baking dish.

    Top with half the onion rings and water.

    Sprinkle with 1 teaspoon of the bouillon, 1/2 teaspoon salt, 1/4 teaspoon of nutmeg and 1/8 teaspoon of the pepper.

    Place chicken quarters on top and add remaining onion rings.

    Sprinkle with remaining bouillon, salt, nutmeg and pepper.

    Cover and bake at 350° for 45 minutes.

    Remove cover; adjust temperature to 375° and bake 15 minutes more or until chicken is brown and fork can be inserted with ease.
