  • 3 lb. frying chicken
  • 1/4 c. flour
  • 1/2 c. olive oil
  • 2 Tbsp. minced onion
  • 2 Tbsp. bell pepper flakes or cubes
  • 1/8 tsp. garlic salt or 2 cloves garlic
  • 1/8 tsp. allspice
  • 3 tsp. Season-All
  • 1/4 tsp. Italian seasoning
  • 1/2 tsp. crushed red pepper
  • 3 1/2 c. tomatoes
  • 1/2 c. white wine or water

Directions

    Cut chicken in pieces.

    Dredge with flour.

    Brown in oil until golden on all sides.

    Drain off oil.

    Add seasonings, tomatoes and wine or water; cover and simmer slowly for 45 minutes or until chicken is tender.

    Makes a superb meal when served with hot Italian garlic bread and tossed salad.
