- 1 (28 oz.) plum tomatoes
- 1 Tbsp. safflower oil
- 1 onion, chopped
- 3 carrots, peeled and thinly sliced
- 3 stalks celery, thinly sliced
- 2 Tbsp. red wine vinegar
- 1/4 tsp. pepper
- 3/4 tsp. sage
- 1/2 tsp. or less salt
- 1/4 tsp. sugar
- 2 chicken breasts, halved
- 3/4 lb. shell shaped macaroni
Directions

1Combine all ingredients, except chicken and pasta, in stew pan or Dutch oven. Bring to a boil.

2Reduce heat, cover and simmer for 25 to 30 minutes. Skin and debone cooked chicken. Add to sauce and cook 25 to 30 minutes until tender. Serve over cooked pasta.
