- olive oil
- chicken (to preference)
- 1 (28 oz.) can Pastene kitchen ready tomatoes
- garlic salt
- salt
- 2 to 3 green peppers
- fresh mushrooms (or 1 can B&B mushrooms)
- basil (fresh is best)
- grated Parmesan or Romano cheese
- 1/4 to 1/2 c. wine (to preference)
Directions

1Brown chicken pieces in olive oil, season with garlic salt or regular salt.

2Remove to a baking dish.

3In frying pan add peppers, sliced, with more olive oil and saute.

4Then add tomatoes, basil and mushrooms. Mix well.

5Flavor with grated cheese and wine.

6Mix well and pour over chicken in baking dish.

7Cook for 30 to 40 minutes at 350° in oven.

8Serve with buttered noodles and a green salad.
