- 2 Tbsp. olive oil or salad oil
- 2 Tbsp. butter or margarine
- 1 (3 to 3 1/2 lb.) frying chicken, cut into pieces
- 1/2 lb. mushrooms, sliced
- 1 medium size onion, chopped
- 2 green peppers, seeded and chopped
- 2 cloves garlic, minced or pressed
- 2 Tbsp. chopped parsley
- 1/2 c. water
- 1/2 c. dry white wine or regular strength chicken broth
- 1 (6 oz.) can tomato paste
- 1 1/2 tsp. salt
- 1/4 tsp. each: marjoram, oregano and thyme leaves
Directions

1Heat oil and butter in a wide frying pan over medium-high heat.

2Add chicken and cook, turning, until browned on all sides. Remove chicken and set aside.

3Pour off and discard all but 3 tablespoons drippings.
