Chicken Cacciatore

Ingredients

  • 1 chicken, cut up
  • 1/4 c. olive oil
  • 1/2 c. red wine vinegar
  • 1/2 c. sweet vermouth
  • 1 Tbsp. dry basil
  • 2 bay leaves
  • 1/2 to 1 tsp. hot pepper
  • 1/2 c. water (if needed)
  • 2 to 3 Tbsp. paprika
  • salt to taste
  • 1 to 2 cloves crushed garlic
  • sliced mushrooms (optional, add last 10 minutes)

Directions

    Remove skin from chicken; cut up into equal portions for cooking uniformly (breast can be cut into 4 pieces).

    Brown chicken in oil and garlic.

    Combine rest of ingredients and pour over chicken.

    Cover and let simmer for approximately 1 hour, basting every 15 minutes.

    Remove bay leaf before serving.

    Serve with spaghetti with oil and garlic sprinkled with Romano cheese.
