Ingredients
- 1 chicken, cut up
- 1/4 c. olive oil
- 1/2 c. red wine vinegar
- 1/2 c. sweet vermouth
- 1 Tbsp. dry basil
- 2 bay leaves
- 1/2 to 1 tsp. hot pepper
- 1/2 c. water (if needed)
- 2 to 3 Tbsp. paprika
- salt to taste
- 1 to 2 cloves crushed garlic
- sliced mushrooms (optional, add last 10 minutes)
Directions

1Remove skin from chicken; cut up into equal portions for cooking uniformly (breast can be cut into 4 pieces).

2Brown chicken in oil and garlic.

3Combine rest of ingredients and pour over chicken.

4Cover and let simmer for approximately 1 hour, basting every 15 minutes.

5Remove bay leaf before serving.

6Serve with spaghetti with oil and garlic sprinkled with Romano cheese.
