Chicken Cacciatore

  • 2 lb. chicken parts
  • 3 Tbsp. flour
  • 2 Tbsp. olive oil
  • 1 (10 1/2 oz.) can Campbell's tomato soup
  • 1/3 c. dry wine
  • 1/2 c. sliced onion
  • 1 c. sliced fresh mushrooms (about 1/4 lb.)
  • 1/2 tsp. basil leaves, crushed
  • 1/2 tsp. oregano leaves, crushed
  • 2 garlic cloves, minced
  • 1 small bay leaf
  • 1 small green pepper, cut in strips

Directions

    Dust chicken with flour; brown chicken in oil.

    Add soup, wine, onion, mushrooms and seasonings.

    Cover; cook over low heat 30 minutes.

    Add green pepper; cook 15 minutes more or until done. Stir occasionally.

    Remove bay leaf.

    Serve over rice or noodles.
