- 1 lb. boneless, skinless chicken breasts, cut into strips
- 1 medium onion, sliced
- 1 medium green pepper, cut into thin strips
- 1 Tbsp. oil
- 8 oz. stewed tomatoes
- 1 (8 oz.) can tomato sauce
- 1 tsp. garlic powder
- 1/4 tsp. dried oregano leaves
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 c. cooked rice
Directions

1Cook chicken, onion and pepper in hot oil in a large skillet until lightly browned.

2Add remaining ingredients, except rice. Bring to a boil.

3Reduce heat and simmer 5 minutes.

4Serve chicken and vegetables over rice.
