Chicken Cacciatore

Ingredients

  • 2 to 3 Tbsp. olive oil
  • 2 cloves garlic, minced
  • 2 chickens, cut up
  • 1 c. onion, sliced
  • 2 green peppers
  • 1 red pepper
  • 1 c. mushrooms
  • 2 c. (small) Italian stewed tomatoes
  • 1/2 c. red wine
  • 1/2 tsp. oregano
  • 1/2 tsp. basil
  • salt to taste
  • 1/4 tsp. seasoned ground pepper
  • 1/2 c. black or green olives
  • 1/2 c. grated Locatelli cheese

Directions

    Remove skin from chicken pieces.

    Brown in olive oil.

    Add garlic, minced. When chicken is browned, add the following: onions, garlic, both peppers, mushrooms and tomatoes.

    Simmer until all are soft.

    Add red wine.

    Add oregano, basil, salt and pepper. Simmer until consistency of spaghetti sauce.

    Add more wine if too thick.

    Add either black olives or green (pitted).

    Before serving, add 1/2 cup grated Locatelli cheese.
