  • cut up frying chicken
  • 1 large can tomato sauce
  • 1 small can tomato paste
  • 1 (6 oz.) can mushrooms
  • salt and pepper
  • oil
  • Mozzarella cheese
  • 1/4 c. Parmesan cheese
  • 1 green pepper
  • 1 large onion
  • 1 clove garlic
  • 1/4 tsp. oregano
  • 1 can onions
  • parsley
  • 1 tsp. sugar (optional)

Directions

    Partially fry chicken in oil until a light golden color. Remove from heat.

    Prepare sauce, combining tomato sauce, paste, sugar and mushrooms.

    Fry onion and pepper, sliced, until onion loses its color.

    Add to sauce, along with oregano, garlic and Parmesan cheese.

    Simmer 1/2 hour, seasoning to taste.

    Place chicken in roasting pan.

    Add sauce, covering chicken.

    Add can of onions.

    Cook 20 minutes at 375°.

    Sprinkle Mozzarella cheese on chicken and bake 10 more minutes.

    Remove from oven; garnish with parsley.
