Ingredients

  • 1/4 c. flour
  • 1 tsp. salt
  • 2 1/2 to 3 lb. chicken
  • 1/4 c. oil
  • 1 green pepper, cut in strips
  • 1 onion, ringed
  • 1/4 tsp. crushed thyme
  • 1 (15 oz.) can tomato sauce
  • 1/2 c. water
  • 1 clove minced garlic
  • 1 tsp. salt
  • 1 tsp. crushed oregano
  • 1/4 tsp. pepper
  • 8 sliced mushrooms

Directions

    Mix the flour and salt; coat chicken pieces.

    Brown chicken on both sides in hot oil about 20 minutes.

    Drain on paper towel. Drain excess fat from skillet.

    Return chicken to skillet; add green pepper and onion.

    Mix tomato sauce, water, seasonings and mushrooms; pour over chicken.

    Cover and simmer 45 minutes or until chicken is tender.

    Serve over rice or spaghetti pasta.
