- 1/4 c. flour
- 1 tsp. salt
- 2 1/2 to 3 lb. chicken
- 1/4 c. oil
- 1 green pepper, cut in strips
- 1 onion, ringed
- 1/4 tsp. crushed thyme
- 1 (15 oz.) can tomato sauce
- 1/2 c. water
- 1 clove minced garlic
- 1 tsp. salt
- 1 tsp. crushed oregano
- 1/4 tsp. pepper
- 8 sliced mushrooms
Directions

1Mix the flour and salt; coat chicken pieces.

2Brown chicken on both sides in hot oil about 20 minutes.

3Drain on paper towel. Drain excess fat from skillet.

4Return chicken to skillet; add green pepper and onion.

5Mix tomato sauce, water, seasonings and mushrooms; pour over chicken.

6Cover and simmer 45 minutes or until chicken is tender.

7Serve over rice or spaghetti pasta.
