- 1 pkg. chicken thighs (2 1/2 to 3 lb.)
- 1 Tbsp. Italian seasoning
- ground parsley
- black pepper
- 2 cloves garlic, minced
- 1 large can tomatoes
- 1 (8 oz.) can tomato sauce
- 2 bell peppers
- mushrooms
Directions

1Remove skin and fat from chicken.

2Put into a 3-quart casserole dish. Add seasoning, parsley, black pepper, garlic, tomatoes (poke holes in tomatoes) and tomato sauce.

3Mix.

4Put into a 350° oven for 1 hour. Slice bell peppers and mushrooms. Add to casserole and return to oven until peppers are tender, not soggy.

5Serve with rice or noodles.
