- 2 1/2 lb. chicken -- cut up
- 1/4 c. flour
- 1/4 c. vegetable oil
- 1 med. onion -- coarsely chopped
- 1 med. green pepper -- coarsely chopped
- 1 clove. garlic -- minced
- 1 1/4 tsp. salt
- 1/8 tsp. pepper
- 2 bay leaves
- 16 oz. tomatoes
- 8 oz. tomato sauce
- 1/4 c. white wine -- dry
- 2 tbs. parsley -- chopped
Directions

1Coat chicken with flour. Preheat frypan to 375 - add the oil. Cook chicken until lightly browned, turning occasionally.

2Remove chicken. Saute onion, green pepper and garlic in the oil.

3Return chicken to pan. Add salt, pepper, bay leaves, tomatoes, tomato sauce and wine. Cover and simmer 30-35 minutes, turning occasionally.

4Garnish with parsley.
