  • 6 Tbsp. salad oil
  • 8 chicken breasts, skinned, boned and cut into bite-size pieces
  • 1 c. minced onions
  • 3/4 c. minced green pepper
  • 1 lb. 3 oz. can whole tomatoes
  • 1 (8 oz.) can tomato sauce
  • 1/2 c. Chianti wine
  • 3 3/4 tsp. salt
  • 1/2 tsp. allspice
  • 1/2 tsp. thyme
  • 1/2 tsp. pepper
  • 2 bay leaves
  • dash of cayenne pepper
  • 4 cloves garlic, minced

Directions

    In hot oil in Dutch oven, saute chicken.

    Add onions, green pepper and garlic.

    Brown lightly.

    Add tomatoes (cut up), tomato sauce, wine and seasonings.

    Simmer, uncovered, for 40 minutes. Serve on spaghetti.
