- 3 lb. boneless chicken fingers
- 2 green peppers
- 1 large white onion
- 1 tsp. chopped garlic
- 1 (12 oz.) box mushrooms, sliced
- salt and pepper (red), crushed
- 1 c. white wine
- 1 c. flour
- salt and pepper
- 2 cans kitchen ready tomatoes
Directions

1Flour chicken fingers.

2Heat oil in skillet.

3Saute chicken. Saute pepper, onions and mushrooms.

4In large pan, saute garlic in olive oil.

5Add 2 cans tomatoes.

6Add sauteed chicken.

7Cook for about 1/2 hour, then add peppers, onions, mushrooms and wine.

8Add salt and crushed red pepper to taste.

9Cook 1/2 hour more.

10Serve over linguine cooked al dente.

11Sprinkle with Romano cheese.
