Chicken Caesar Salad

- 4 chicken breasts, fat removed and cut into bite size chunks
- 1/2 c. Caesar salad dressing (Ken's Caesar lite)
- 1 lb. fresh spinach, washed and broken for salad
- 1/4 lb. fresh mushrooms, washed and sliced
- 1 small onion, sliced (optional)
- 1 medium tomato in chunks (optional)
Directions

1Arrange spinach on serving plate.

2Add mushrooms and vegetables.

3In nonstick frying pan, saute chicken pieces in salad dressing just until cooked, 5 to 8 minutes.

4Spoon over spinach and drizzle with pan juices.

5Add a few herbed croutons on top.
