Chicken Caesar Salad

  • 1/2 cup bread wholegrain, cubed
  • 2 teaspoons oil
  • 2 slices bacon chopped
  • 7 ounces baby romaine lettuce
  • 12 ounces chicken shredded
  • 2 eggs hard-boiled, halved
  • dressing
  • 1/2 cup olive oil
  • 1/2 lemon juiced
  • 1 tablespoon red wine vinegar
  • 1 tablespoon anchovies drained, chopped
  • 2 cloves garlic minced
  • hot sauce to taste
  • 1/4 cup Parmesan cheese shaved, to serve

Directions

    Preheat oven to 350°F. Toast bread for 5-10 mins, until golden. Set aside to cool.

    Meanwhile, heat oil in a frying pan. Add bacon and cook for 2 mins, until crispy. Drain on paper towels. Chop. Toss with lettuce, chicken and hard-boiled eggs.

    To make the dressing, whisk together olive oil, lemon juice, vinegar, anchovies, garlic and hot sauce. Season.

    Drizzle dressing over salad and top with croutons and Parmesan. Serve immediately.
