Chicken Cashew

  • 3 c. cooked rice
  • 1 c. sliced chicken breast
  • 1/2 c. button mushrooms
  • 1/2 c. diced onion
  • 1/2 c. cashew nuts
  • 3 to 4 dried chili peppers
  • 1/2 c. chopped celery stalk
  • 2 Tbsp. soy sauce
  • 1 tsp. garlic salt
  • 1 Tbsp. cornstarch
  • 1/2 c. chicken broth
  • 2 Tbsp. vegetable oil

Directions

    Heat the oil in a frying pan.

    Fry the chicken and onion, sprinkle with garlic salt.

    Keep turning until chicken is light brown.

    Add chopped celery, mushrooms, soy sauce and chicken broth. Cover and simmer for 5 minutes.

    Add cornstarch and stir until thickened.

    Add cashew nuts and stir.

    Add dried chilies.

    Spoon over rice.
