  • 2 c. diced chicken
  • 2 c. rice
  • 2 cans cream of chicken soup or cream of mushroom soup
  • 1 c. chopped celery
  • 3 Tbsp. onion, minced
  • 1 1/2 c. mayonnaise
  • 1 small can evaporated milk
  • 1 1/2 c. crumbled corn flakes
  • 1/2 stick melted margarine

Directions

    Cook chicken and cool (or use canned chicken).

    Mix with ingredients.

    Cover with topping of 1 1/2 cups crumbled corn flakes and 1/2 stick margarine, melted.

    Bake at 350° for 40 minutes. Will fill 2 small casserole dishes.

    It can be frozen.
