Chicken Casserole

Ingredients

  • fryer or 4 breasts (chunks)
  • 1 stick margarine
  • 1 c. bell pepper
  • 1 c. celery
  • 1 c. onions
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 10 stuffed olives
  • salt and pepper to taste
  • 1/2 lb. Velveeta cheese
  • 2 to 3 c. wide noodles
  • 1/2 c. broth

    Boil chicken until tender.

    Debone when cool.

    Reserve broth. Saute in margarine the bell pepper, celery and onions until tender.

    Add soup, olives, salt, pepper, 1/2 cup broth and 1/2 cheese.

    Heat until cheese melts.

    Bring salted broth to boil. Add water to broth to make enough liquid to cook 2 to 3 cups noodles.

    Add to vegetable and chicken mixture.

    Pour in lightly greased casserole.

    Cover with remaining cheese.

    Heat in 350° oven about 30 minutes or until cheese melts.
