Ingredients

  • 1 c. cooked rice
  • 1/2 c. butter
  • 1 can mushrooms (save liquid)
  • 1/4 c. pimento, chopped
  • 1 tsp. salt
  • 1/2 c. slivered almonds
  • 1/2 c. onion, chopped
  • 1/4 c. flour
  • 1 1/4 c. cooked chicken, chopped or 1 whole fryer, cooked and chopped
  • 2 Tbsp. parsley flakes
  • 1/4 tsp. pepper
  • 1 1/2 c. light cream or half and half

Directions

    Saute onion until tender in butter.

    Remove from heat and stir in flour.

    Drain mushroom liquid and add enough chicken broth to make 1 1/4 cups.

    Add cream gradually, stirring until thickened. Add rest of ingredients and bake at 350° for 30 minutes or until brown.
