  • 2 12 lbs chicken pieces
  • 12 cup diced tomato
  • 1 onion, chopped
  • 12 cup Spanish olive oil
  • 1 green pepper, chopped
  • 20 mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 teaspoon salt
  • 34 cup tomato sauce
  • 12 cup roasted red pepper, strips
  • chopped parsley
  • cooked rice (to serve)

Directions

    Heat oil in an ovenproof skillet, and brown chicken.

    Add garlic, green pepper, onion, and saute until vegetables soften.

    Add tomato sauce, tomatoes, mushrooms, salt and bring to a boil.

    Cover pan and bake at 450F for 40-45 minutes.

    Garnish with roasted peppers and parsley, and serve with rice.
