- 2 12 lbs chicken pieces
- 12 cup diced tomato
- 1 onion, chopped
- 12 cup Spanish olive oil
- 1 green pepper, chopped
- 20 mushrooms, sliced
- 3 garlic cloves, minced
- 1 teaspoon salt
- 34 cup tomato sauce
- 12 cup roasted red pepper, strips
- chopped parsley
- cooked rice (to serve)
Directions

1Heat oil in an ovenproof skillet, and brown chicken.

2Add garlic, green pepper, onion, and saute until vegetables soften.

3Add tomato sauce, tomatoes, mushrooms, salt and bring to a boil.

4Cover pan and bake at 450F for 40-45 minutes.

5Garnish with roasted peppers and parsley, and serve with rice.
