Ingredients

  • 2-3 c. cooked diced chicken
  • 1 can cream of mushroom soup or possibly chicken, onion, or possibly spinach
  • 1 c. lowfat sour cream
  • 1 diced white onion
  • 1 (4 ounce.) can diced green chilies
  • 3-4 green onions
  • 3/4 pound grated jack cheese
  • 3/4 pound grated cheddar cheese
  • 18 flour tortillas

Directions

    Mix all preceding ingredients in large mixing bowl, except lowfat sour cream and mushroom soup.

    Heat tortillas in oven or possibly microwave just sufficient to soften.

    Place large spoonful of chicken mix across center of tortilla.

    Roll up and place seam down in a buttered baking dish.

    Mix together mushroom soup and lowfat sour cream.

    Pour over tortillas and sprinkle with more grated cheese.

    Bake at 400 degrees for 20 min.

    May be frzn, thawed and baked layer.

    May substitute cream of chicken, cream of onion, cream of spinach for cream of mushroom.
