  • 1 (2 to 2 1/2 lb.) ready-to-cook broiler-fryer, cut up
  • seasoned flour
  • 4 tsp. dried thyme
  • 3 Tbsp. butter or margarine
  • 4 chopped scallions or small onions
  • 1/4 lb. chopped mushrooms
  • 1 tsp. salt
  • 1 tsp. sugar
  • 2 diced tomatoes
  • 1/3 c. apple juice
  • 2 Tbsp. fresh, frozen or canned lemon juice
  • 2 Tbsp. snipped chives
  • 2 Tbsp. snipped parsley

Directions

    Coat chicken with seasoned flour, to which thyme had been added.

    In hot butter in a large skillet, saute chicken until golden on all sides.

    Add scallions, mushrooms, sugar, salt, lemon juice, apple juice and tomatoes.

    Cook slowly, covered, for 35 to 45 minutes, or until chicken is fork tender.

    Sprinkle with parsley and chives.

    Makes 3 to 4 servings.
