- 1 tsp. oil
- 1 lb. ground chicken
- 1 tbsp. bottled chopped garlic
- 2 can diced tomatoes with jalapeno peppers
- 2 tsp. each ground cumin and chili powder
- 1 can kidney beans
- 1 can black beans
- 1 can whole kernel corn
- Accompaniments: sour cream, shredded Mexican-style Cheddar-jack cheese and tortilla chips
Directions

1Heat oil in a large nonstick skillet over medium-high heat.

2Add chicken and cook, breaking up chunks, 5 minutes or until browned.

3Add the garlic, tomatoes and spices.

4Cover and simmer 5 minutes, stirring occasionally.

5Stir in beans and corn, cover and heat through.

6Serve with sour cream, cheese and chips.
