Ingredients

  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 whole Medium Sized Onion, Diced
  • 2 cloves Garlic, Minced
  • 1 teaspoon Ground Cumin
  • 6 whole Medium Sized Boneless, Skinless Chicken Breasts
  • 3 cans Northern White Beans With Juice 15oz
  • 1-1/2 cup Frozen Corn
  • 1 can 15oz Pinto Beans Drained
  • 1-1/2 cup Water
  • 2 cans 4oz Green Chilies
  • 2 Tablespoons Chicken Bouillon Or Chicken Base
  • 5 dashes Tabasco Sauce

Directions

    Saute Onion and Garlic in olive oil. Layer all the above ingredients in order into a slow cooker.

    Cook in slow cooker on High for 4 hours or Low for 6 hours.

    Garnish with Sour Cream, Monterrey Jack cheese, Tortilla chips and Jalapenos.
