Ingredients

  • 3 boneless, skinless, chicken thighs cut into small bite sized pieces
  • 1 onion, diced
  • 3 clove minced garlic
  • 2 tbsp chili powder
  • 4 tsp cumin powder
  • 1 can of chopped green chilis
  • 3 chopped chilis in adobo sauce (canned)
  • 2 tbsp fresh chopped cilantro
  • 6 cup chicken stock
  • 2 can navy beans

Directions

    Saute chicken, garlic, and onions in a little bit of olive oil.

    While cooking, add your chili powder, cumin powder.

    Add the chopped green chilis, and chopped chilis in adobo sauce, give it a few stirs.

    Add the chicken stock and beans.

    Bring to a boil and turn down.

    Simmer for a couple hours.

    In the last 30 minutes, add your cilantro.

    Serve with some shredded cheese and a dollop of sour cream on top, if desired.
