Chicken Chowder

Ingredients

  • 30 g butter
  • 2 leeks, sliced
  • 375 g button mushrooms, halved
  • 13 cup flour
  • 12 teaspoon chili powder
  • 3 cups chicken stock
  • 1 cup water
  • 2 cups milk
  • 1 kg cooked chicken, skin removed and flesh shredded
  • 3 tablespoons fresh chives, chopped
  • fresh ground black pepper

Directions

    Melt butter in a saucepan over a medium heat, add leeks and cook, stirring, for 5 minutes or until leeks are soft and golden.

    Add mushrooms and cook for 2 minutes longer.

    Stir in flour and chilli powder and cook for 2 minutes.

    Gradually stir in stock and continue stirring until mixture is smooth.

    Add water and milk, bring to simmering and simmer, stirring, for 5 minutes.

    Add chicken, chives and black pepper to taste and cook 3 minutes or until soup is heated through.
