  • 6 boneless chicken breasts
  • 2 c. uncooked rice
  • 1 c. chicken broth
  • 4 to 6 sliced tomatoes
  • 1 onion, chopped
  • 1 bunch cilantro, chopped
  • 2 c. grated Monterey Jack cheese

Directions

    Saute the chicken breasts in 1 tablespoon oil.

    Set aside. Saute onion and cilantro; set aside.

    Place uncooked rice in bottom of a 9 x 13-inch casserole. Top with 1/2 of the tomato slices, onions and cilantro.

    Sprinkle with 1/2 of the cheese. Repeat layers of vegetables.

    Place chicken breasts on top.

    Pour broth over all. Cover and cook in

    a 350° oven. Check condition of rice and add more broth, if necessary. Top with cheese and cook, uncovered, until cheese is melted.
