- 6 boneless chicken breasts
- 2 c. uncooked rice
- 1 c. chicken broth
- 4 to 6 sliced tomatoes
- 1 onion, chopped
- 1 bunch cilantro, chopped
- 2 c. grated Monterey Jack cheese
Directions

1Saute the chicken breasts in 1 tablespoon oil.

2Set aside. Saute onion and cilantro; set aside.

3Place uncooked rice in bottom of a 9 x 13-inch casserole. Top with 1/2 of the tomato slices, onions and cilantro.

4Sprinkle with 1/2 of the cheese. Repeat layers of vegetables.

5Place chicken breasts on top.

6Pour broth over all. Cover and cook in

7a 350° oven. Check condition of rice and add more broth, if necessary. Top with cheese and cook, uncovered, until cheese is melted.
