- 2 whole boneless chicken breasts (about 1 1/2 lb.)
- 1 (4 oz.) can sliced mushrooms, drained
- 2 Tbsp. butter or margarine
- 1 can cream of chicken soup
- 1 1/2 c. water
- 2 Tbsp. chopped parsley
- 1 1/2 c. quick cooking rice (uncooked, Minute rice)
Directions

1In skillet, put sliced chicken breasts and mushrooms in butter and brown.

2Stir in soup, water, parsley and dash of pepper. Cover; simmer 20 minutes.

3Stir in rice.

4Simmer 10 minutes more or until liquid is absorbed.

5Stir often.

6Serves 4.
