Chicken Cordon Bleu

  • 2 large chicken breasts
  • 4 thin slices cooked ham
  • 4 Swiss cheese slices
  • 1/4 c. flour
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 egg, slightly beaten
  • 1/2 c. dry Italian bread crumbs
  • 2 Tbsp. oil
  • 2 Tbsp. water

    If chicken is not boneless, remove bones and skin.

    Then cut chicken breasts into halves.

    Place chicken between 2 pieces of waxed paper.

    Pound with meat mallet or hammer until 1/4-inch thick.

    Place one slice of ham and cheese on each piece of chicken. Roll up carefully, beginning at narrow end.

    Secure with wooden toothpick.
