Chicken Corn Casserole

  • chicken, boiled beforehand
  • 4 1/2 Tbsp. butter
  • 6 Tbsp. flour
  • 1 1/2 c. chicken broth
  • 3/4 tsp. salt
  • 3 3/4 c. cream-style corn
  • 3 c. diced chicken
  • 1 1/2 c. soft bread crumbs
  • 6 Tbsp. melted butter
  • pepper to taste

Directions

    Melt 4 1/2 tablespoons butter.

    Add flour; blend well.

    Stir over low heat until bubbly.

    Add broth all at once and cook, stirring constantly, until thickened.

    Season with salt and pepper.

    Combine corn, chicken and sauce in a 2-quart casserole dish.

    Top with bread crumbs, blended with 6 tablespoons melted butter.

    Bake at 350° for 30 to 40 minutes, or until crumbs are brown and sauce is bubbly.
