- 2 Tbsp. all-purpose flour
- 1 medium onion, chopped
- 1 (16 oz.) can diced tomatoes
- 1 (8 oz.) can tomato sauce
- 1/4 c. water
- 1 medium green pepper, chopped
- 1 large bay leaf
- 3/4 tsp. oregano, crushed
- 1/2 tsp. thyme, crushed
- 1/8 tsp. pepper
- 1/8 to 1/4 tsp. cayenne pepper
- 1 lb. diced chicken
Directions

1Put flour in dry 1 1/2-quart Dutch oven.

2Cook over low heat until light brown, stirring frequently.

3Add onion and tomatoes; cook until onion is translucent.

4Stir in remaining ingredients, mixing well.

5Cover and simmer for 20 to 30 minutes, or until chicken is thoroughly cooked and green pepper is tender.

6Serve over brown rice.
