- 2 boneless, skinless chicken breasts, cut into pieces
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 4 Tbsp. olive oil
- 1 c. onion, finely chopped
- 1/2 c. celery, finely diced
- 1/2 c. green pepper, finely diced
- 2 cloves garlic, minced
- 1 (14 1/2 oz.) can whole peeled tomatoes
- 1/2 c. water
- 2 tsp. paprika
- 1/2 tsp. salt
- 1/4 tsp. cayenne pepper
- 1 bay leaf (whole)
- 1 tsp. cornstarch
- 1 Tbsp. cold water
- Joe's Stuff (Creole seasoning)
Directions

1Wash chicken pieces; pat dry.

2Toss pieces in salt and pepper. Heat 1 tablespoon oil in skillet; cook chicken in oil at medium-high heat for approximately 5 minutes, or until chicken is lightly browned, tossing frequently.

3Remove chicken and juices; set aside.

4Heat 3 tablespoons oil in the same skillet.

5Add vegetables and garlic; saute until tender.

6Stir in tomatoes and juice, breaking into smaller pieces.

7Add 1/2 cup water and the seasonings; stir and bring to a boil.

8Cover; simmer over medium-low heat for about 10 minutes.

9Add chicken, juices and Joe's Stuff (to taste) to the sauce, stirring well.

10Uncover; simmer over low heat for 10 to 15 minutes, or until chicken is tender.
